Menus & plating

Culinary

Menus composed as ceremony — recipe, preparation, plating, and flavor profile refined until the table itself feels inherited.

About This Discipline

We cook the way the house builds and braids: ingredients first, then fire, then the last gesture of plating.

A menu is a floor plan for the evening. Each course is a room: temperature, acidity, fat, and silence between plates. The flavor profile is designed, not accumulated.

Preparation is slow where it must be — stocks, doughs, marinades — and exact where it must be. Copper, ember, and ivory ceramic are part of the recipe, not decoration after the fact.

Plating is elevation: the guest should read the dish before the first bite, and remember it after the last.
